Dreamy dairy-free hot chocolate

This is how I made hot chocolate for my daughter since her very first cup. This was all she knew. And then, in kindergarten, my daughter’s teacher had a hot cocoa party and I volunteered to bring the hot chocolate mix that had to be store-bought, so I got the Good & Gather hot cocoa that was dairy-free. My daughter came home telling me that it tasted like water!

Dairy doesn’t make hot chocolate good; chocolate and fat do. And with the right ingredients, you can absolutely achieve a luscious, chocolatey taste with a beautiful mouth feel, and I promise you won’t miss the dairy.

A few notes about the ingredients:

Use canned coconut milk.

Canned coconut milk. Do not use coconut milk beverage. You want the fat that comes from the coconut milk from the can. In this recipe, I’m using a small can of Aroy-D coconut milk (5.6 fl. oz.). This small amount helps to give the fat your hot chocolate needs without an overpowering coconut flavor. If you’re measuring out coconut milk from a larger can, be sure to combine liquids and solids before measuring.

Dreamy dairy-free hot chocolate
Serves 3-4

Ingredients:

Small 5.6 oz. canned coconut milk (or measure 2/3 cup of canned coconut milk)
1/4 cup chocolate chips (Enjoy Life is my choice)
2 TBS cocoa powder (see Spokin’s recommended cocoa powders)
2 TBS sugar
1 tsp vanilla extract
1/16 tsp (or a heavy pinch) of Kosher salt
1-1/2 cup thick plant milk (Oatly’s full fat oat milk is my choice)

Directions:

  1. In a small saucepan, add all ingredients except your 1.5 cups of plant milk. In other words, add coconut milk, chocolate chips, cooca powder, sugar, vanilla and salt. Turn on stove to medium heat.

  2. As the mixture heats up, combine ingredients with a whisk. When all chocolate chips have melted and ingredients are combined, add your 1.5 cups of plant milk.

  3. Heat to desired temperature. Serve.
