Simple sesame dressing

This is a dressing that is full of flavor and can be used in a salad or a noodle salad—obviously not safe for those managing sesame allergies.

My favorite is to use this with a (cooled) thin somen noodle with any combination of fresh vegetables like shredded purple cabbage, sliced scallions, bell pepper, spring mix, baby spinach, microgreens, red onion.

Somen is a wheat noodle, but any thin noodle will do. Rice noodles would work great for those avoiding wheat.

You can even make it into a true vegetable salad without noodles. For protein options, I recommend shredded leftover chicken, edamame or tofu cubes.

Simple sesame dressing
Serves 2

Ingredients

2 TBS toasted sesame oil
1 TBS honey
1 tsp rice vinegar (or white vinegar)
1/2 tsp table salt*

Directions:

  1. Combine ingredients. Add salt to taste.

  2. Pour about 2 TBS onto one serving of noodle salad. Add more to taste.

*Note: I recommend table salt because it will dissolve better in the dressing. I tried using kosher salt (adjust to 1 tsp), and it tasted fine but the salt crystals never really dissolved.
